GONZALES, Olympia, Filipino food technologist, b-1925. During the 1980s she developed several new products from coconuts (their national product). Coco Manila is a canned milk product made from coconut flesh. It has been stabilised with a shelf life of one year (as opposed to a few hours). So now companies in the Philippines can export products that previously had to be discarded. Other products include Zesto Coco Juice, an uncarbonated coconut water drink with 6 months stability, and Buko, a fruit cocktail from the flesh of immature coconuts. Until her retirement Olympia directed a large group of technologists on food projects.
